Stuffed Chicken Parmesan

OK so the recipe has the word "Parmesan" in it correct? Just to clear up something though there is no Parmesan in this recipe... Random. It is from one of my new favorite cookbooks that we received for our wedding. Its fabulous because most of the recipes give you the measurements and such to make it for 2 people so its perfect for 2 of us. The book is called Bride & Groom First and Forever Cookbook. However, for this recipe I increased the recipe and made it for 6 people but I will post the recipe that will serve 2...make sense??

Key Ingredients

Spinach
Ricotta Cheese
Alfredo Sauce
Lemon
Nutmeg
Chicken Breasts
Prosciutto
Swiss Cheese

Preheat oven to 425 degrees F. Squeeze the excess liquid from one 10-ounce package thawed frozen spinach. Combine with 1/2 cup ricotta cheese, a generous 1/4 cup Alfredo sauce, squeeze of lemon, pinch of nutmeg, salt, and pepper. Place 2 skinless, boneless chicken breast halves between 2 pieces of plastic wrap. Whack with the back of wooden spoon until the surface area nearly doubles. Place in a baking dish. Season with salt and pepper. Slather some additional Alfredo sauce over each breast followed by prosciutto, the spinach mixture, and Swiss cheese. Bake for about 15 minutes.



This was definitely a more complex recipe for me at least with the squeeze and pinching and such. It was fun though because it left some things up to me...just a little nothing crazy. So the spinach mixture smelled nasty and I was worried that we were going to have to order pizza but when I opened the oven it smelled AMAZING!
Also, I had no flipping idea what "prosciutto" was. We went to Harmon's I asked the lady she gave me a very excited and helpful explanation and then pointed me towards the deli... it's a meat. Reminds me a bit of jerky but it was absolutely delicious in this recipe.
I have no pictures because it was such a great hit and devoured so very quickly I had no time.
I served it with a tossed salad, ravioli, and bread sticks.
It is definitely a new favorite!!!
