Pumpkin Chocolate Chip Cookies


It’s that time again. Pumpkin time again! So many yummy things to do with pumpkin and I love the way it makes your house smell. Love it! I made pumpkin chocolate cookies tonight. They were so moist and delicious. I know that you can also do white chocolate chips instead of regular chocolate chips. Also, be sure to use the left over pumpkin not used in the recipe for pumpkin pancakes 

 I’m not totally about presentation on these cookies but I always like to show a picture of what I made.

1 c. pumpkin
3/4 c. sugar
1/2 c. oil
1 egg
2 c. flour
2 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. salt
1 tsp. baking soda
1 tsp. milk
1 c. chocolate chips
1 tsp. vanilla


Dissolve baking soda in milk; set aside. In large bowl add pumpkin, sugar, oil, and egg; stir. Add flour, baking powder, cinnamon, salt and baking soda mixture. Mix well. Stir in chocolate chips and vanilla.
Spoon onto cookie sheet. Bake 375 degrees 10-12 minutes or until done.
