A girl at my work made these the other night and I got the recipe from her and then I was going through a cookbook of mine and found a recipe for them as well. So I combined the two and added in my own little something something and they are delicious! I'm telling you I can't just eat one they are that good! And... they are kinda healthy.
2 cups applesauce
1/2 cup butter, softened
1 cup sugar
2 eggs, well beaten
2 cups all-purpose flour
1 1/2 tsp. baking soda
1/2 tsp. salt
2 tsp. ground cinnamon
1 tsp. ground cloves
1 tsp. allspice
Stir first four ingredients until well blended. Sift dry ingredients together. Stir into applesauce mixture just until moist. Pour batter into greased or paper-lined muffin cups. Bake at 350°F for 20 minutes or until tops are golden brown.
