Raisin Bran Muffins
Found this recipe on the web. I was in a muffin baking mood only because I was watching a show and this girl was baking a ton of muffins and I got antsy and wanted to as well so I looked up muffin recipes and found one that I had all of the ingredients for already in the house. The only thing I slightly altered but don't think really matters except in the nutritional aspect is for the raisin bran I used Fiber One raisin bran crunch. I bought it for $1!!!! when I went shopping with the grocery guru last week.
Ingredients list:
2 medium eggs, beaten.
3 cups of raisin bran.
1 ½ cups of all-purpose flour.
1 ½ cups of milk.
½ cup of honey.
¼ cup of melted butter.
1 ½ tablespoons of baking powder.
¼ teaspoon of cinnamon.
¼ teaspoon of salt.
Instructions:
Preheat your oven to 400°F (205°C).
Sift together the all-purpose flour, baking powder, cinnamon and salt.
Pour the milk over the raisin bran; stir and allow to stand for 5 minutes. Stir in the beaten eggs, honey and melted butter.
Add the dry ingredients and stir until just moistened.
Spoon the batter into twelve greased muffin pans.
Bake for 20 minutes or until done.
