Guacamole

I love love love guacamole and avocados  I think its because for so many years for some strange reason I thought they would be disgusting and then I tried them and they weren't so thats the story and I'm sticking to it. As much as I love them sometimes they go bad at my house because basically I forget that I have them. It actually happens with multiple food items a lot more often than it should. Anywhoo...the  other day I was a local grocery store they had avocados and a recipe for guacamole. I bought the avocados and went home and made the guacamole and I am sitting here eating its deliciousness as I type this up.


3 ripe avocados, pitted, peeled, mashed
1 can (10 oz) Original Diced Tomatoes and Chiles
1/2 cup chopped onoin
1 Tbsp. lime juice
1/2 tsp salt
Black Pepper


Mix until well blended!

Bacon Wrapped Smokies

DISCLAIMER: These are probably the most unhealthy things ever also I guarantee if you bring them to a gathering they will be gone within minutes no joke...

Ingredients: 
1 pkg bacon with strips cut in half
1 pkg little smokies
1 stick butter 
2 cups brown sugar

Directions:
Wrap little smokies in bacon place in baking dish. Melt butter stir in 1 cup brown sugar and pour over lil' smokies. Then spread remaining brown sugar on top. The recipe says to do 350°F for 15-20 then turn up the heat to 400°F and do another 5 minutes. Both times I've made these its been better to just start out at 400°F and its more like 25 minutes. Just watch it and make sure the bacon gets cooked. So wrong and so delicious and so easy of course!

Fondue Americana



My family has been making this for years and it so so dang good!!! Perfect for Fall/Football season.

1 pound ground beef or ground turkey (browned)
1 small can diced green chilies
1/2 pound Velveeta cheese
1 small can tomato sauce 6oz
chopped onions to taste

Add chilies and onions to meat. Dice cheese and add to meat mixture. Add tomato sauce and 1 can of water. Simmer 15-20 minutes to proper consistency. If too thin you can add more cheese or thicken with a small amount of thickening. Keep warm in crock pot. Serve with tortilla chips or bread.

Taco Soup



I love this soup and it is so healthy for you too! AND... you can use it for leftovers for a couple of days or use it as chip dip, taco salad or Haystacks! Love it!

1 pound of ground beef or turkey (browned)
3 cans kidney beans (DO NOT DRAIN)
1 can of corn (DO NOT DRAIN)
1 can diced tomatoes
1 4oz can of diced green chilies
1 15oz can tomatoe sauce
1/2 pkg taco seasoning mix
1 pkg ranch dressing mix
1 can black beans (Optional)

Simmer 20-30 minutes

Fresh Fruit Dip

One of my Mom's most yummiest recipes is the amazing fruit dip that she makes. It's really simple!
All you need is 8 oz softened cream cheese and 7 oz marshmallow cream... Whip together and Voila! Serve with fresh fruit such as strawberries, grapes, melons, kiwi's etc!

Superbowl Cooking!

Both of these recipes are pretty dang easy and absolutely positively delicious and... they are on the healthier side.

First one is a dip. Lets call it Salsa Shrimp Dip.
1 1/2 lbs cocktail shrimp (thawed if they are frozen)
2 cups Chunky Pico de Gallo or Salsa (I bought the fresh stuff from Harmons, would love to make my own, you don't want it very runny)
1 1/2 cups cocktail sauce
1 lemon juiced
Mix it all together and serve with your favorite cracker or chips!

Next on the menu: Pizza Wontons

Crispy Pizza Wontons
Wonton wrappers
mozzarella cheese
marinara sauce (shop bought is fine)
small slices of salami/pepperoni/ or your favorite pizza topping
1 egg
Vegetable oil
Pre heat the oven to 400. Spoon a blob of marinara sauce into the center of the wonton. Top with a cube of cheese and a slice of salami. Crack the egg, and give it a quick whisk. Use a pastry brush (or your fingers) to dab a layer of egg around the edges of the wonton wrapper, then fold over into a triangle (try to seal out air pockets)
Repeat for the rest of the wontons
Brush both sides of each wonton with vegetable oil and place on a baking tray. Bake for about 8-10 minutes until the parcels are golden and crispy.
Suggestion for next time - Try using alfredo sauce and grilled chicken I think it would be yummy.
